Easy Breakfast Casserole
I don’t share many recipes but this is one worth sharing, especially since it looks so good in this Arthur Court pyrex baking dish with the most adorable rabbit lid!
Arthur Court has so many beautiful pieces to take your tablescapes to the next level. And I pretty much love everything in their bunny and bird collections! They also have some pretty pieces that I really love for fall like the acorns and squirrels.
Isn’t the bunny adorable?! This dish is easy to clean, simply hand wash the lid and throw the baking dish into the dishwasher.
Wouldn’t this be so darling at a baby shower or Spring brunch? Or you can use it all year-round if you love bunnies as much as I do!
Back to the breakfast casserole recipe. This delicious recipe can be made into muffins or a baking dish like the one I used. And it can be made to work on a variety of diets and allergy restrictions.
It works well for a variety of diets like Keto, Low Carb, Bright Line Eating, and Whole 30. You can use turkey sausage, or organic hamburger meat. Omit the cheese for a dairy intolerance, etc. There are lots of ways to make this breakfast casserole work for you and your family.
It is so simple to throw together and easy to make ahead of time if you like to meal prep.

Broccoli, Egg, Cheese, Sausage Casserole
Start by gathering the ingredients. You’ll need…
- 8 Ounces of Sausage/Turkey/Hamburger
- 3 Cups Frozen (Thawed) Broccoli
- 1 Cup Shredded Cheddar Cheese
- 1 Teaspoon Dried Basil
- 1/2 Teaspoon Dried Oregano
- 1/2 Teaspoon Onion Powder
- 1/2 Teaspoon Pink Himalayan Salt
- 8 Large Eggs
Next, you’ll want to brown your sausage/meat. Once browned, drain and pour into a large mixing bowl.
Add your thawed, frozen broccoli, cheese, herbs, and spices into the bowl and mix well.
Beat your eggs in a separate bowl and then add into the broccoli mixture.
Pour the mixture into your Arthur Court baking dish or into individual muffin tins.
Bake for 30 minutes or until golden brown. The middle should be firm and a toothpick should come out of the center clean!
That is all there is to it! It is so delicious and it reheats wonderfully! For leftovers, I like to take a slice and pop it into my Ninja Foodi Air Fryer for breakfast or dinner. Oh man, it is so good!
Speaking of Air Fryers… if you don’t have one yet, you need one. I’ve been using an air fryer for a few years but I recently purchased this double basket Ninja Foodie Air Fryer and we LOVE it! It is so nice to be able to cook meat on one side and veggies on the other. You can program the sides to finish at the same time, but you can also use them completely separate. It is great for quickly warming food up without it getting soggy. It has options to bake, air fry, roast, dehydrate, plus a few more. I use ours daily! Of course I have it in white and I love how clean it looks.
Broccoli Egg Cheese Casserole
Broccoli, egg, and cheese breakfast casserole; perfect for the whole family! Easily make them into muffin cups for a grab-and-go breakfast!
Ingredients
- 8 Ounces of Sausage
- 3 Cups Broccoli
- 1 Cup Shredded Cheddar Cheese
- 1 Teaspoon Dried Basil
- 1/2 Teaspoon Dried Oregano
- 1/2 Teaspoon Onion Powder
- 1/2 Teaspoon Pink Himalayan Salt
- 8 Large Eggs
Instructions
- Preheat oven to 350F
- Grease a 9x12 pyrex dish or muffin cups
- Brown sausage
- Combine cooked sausage, broccoli, cheese, herbs and spices in a large bowl
- Whisk eggs and mix them into the broccoli mixture
- Pour the mixture into your pan or muffin cups
- Cook for 30 minutes or until golden brown
